Canals of France publishes a cookbook:
"A Week on the Water", a Culinary Scrapbook
featuring the best recipes of luxury barges Tango
& Fandango Now try your own hand at the delicious
cuisine of Languedoc Southern France as prepared on
boutique barges Tango and Fandango.
Sixty five pages showcase all the great recipes and
ingredients of the region around our cruise area,
the gorgeous Canal du Midi. How about a starting with
a 'Coquille' of Seafood gratin with shrimp sauce,
followed by marinated lamb shanks roasted for five
hours, and pears poached in amber Noilly Prat? All
the favorite French desserts are here with easy to
execute instructions, warm chocolate fondant cakes,
and rich creme brulées will bring French bistrot
flavours home as often as you dare to eat them.

Author
Hazel Young, owner and host of the Fandango,
is a graduate of the French National Cooking School
in Beaune, France. She has run numerous cooking seminars
and culinary cruises aboard Fandango and has overseen
the boutique barge's extraordinary menus for 10 years
now. Her son Daniel Sak, the owner
of Tango, is also a graduate of the
French National Cooking School as well as a devoted
expert to the Langeudoc's award winning wine scene.
Between the two of them, they have developed quite
a repertoire of Provençal and Languedoc dishes
as detailed in the book, followed by Daniel's Languedocian
wine pairings for each recipe.

A Week on the Water has whet your
appetite, you might also consider coming on a barge
cruise this summer. We have a few prime weeks still
available between April and October. Both luxury barges
have "interactive" kitchens where guests
can get involved in meal preparation or simply watch
while enjoying a glass of wine. Culinary cruises with
formal cooking lessons and provisioning in French
markets is available for groups of minimum four guests
and up.
